You're right. Canuck means Canadian. Just like Yankee means American. So you've got the New York Yankees in baseball, you've got the Montreal Canadiens (French, therefore "e" not "a"), and the Vancouver Canucks in hockey.
The fish is a killer whale, or "orca". It's a symbol of B.C., the province that Vancouver is in. Canada has provinces, similar to how the U.S. has states.
Go to Vancouver and it will all become clear. You can go whale watching in the morning and then watch a hockey game at night.

The Random House Dictionary notes that: "The term Canuck is first recorded about 1835 as an Americanism, originally referring specifically to a French Canadian. This was probably the original meaning, though in Canada and other countries, Canuck now more often refers to any Canadian."
